As we celebrate, I wish everyone a Happy Martin Luther King Day, I also extend my heart and love to you all. This day is day to reflect on what brings us together as humans as we move forward towards our futures together striving and working towards peace and harmony. I am so grateful to share healthy options for you and your families. Well, since it's that time we made Wild Card Wings 3 Ways! Which would you make? What would you try? Lemon Pepper Wings, Garlic Parmesan Wings or how about Jamaican Jerk Wings? Well, I made them all annnnddd I made a brand new recipe I like to call 'Caulifornia Rice Balls'! It's an arancini ball but without the rice. I use cauliflower rice as an alternative ingredient. With egg whites and goat cheese as a few plot twist. They are tasty, crunchy, new & delicious. They are light and delightful! A must try! This is my second try at these and it's already a house favorite! Light on the wallet and light on the hips! Let's Get To Cookin! When you think of comfort you think of a warm cup of tea, a warm bed, a scarf around your neck, a cozy fire, and sometimes it's your family and friends that come to mind. They sure have a way of making you feel all fuzzy and cozy inside. I was lucky enough to have some loved ones over for the holiday. We had a lovely time. Grateful to say the least. My mom has never had branzino before. Can you believe it! I made a Whole Stuffed Branzino for her after we were looking forward to it at Bestia the night before. They had ran out by the time we got there but they were super nice about it all! Great food & service. Sooooo, I made one off the cuff. It wasn't planned and just before I started to prepare my mom leaned over and said, "Tape the prep." And I said, "Oh! Well you have to record." And she said, Ok! I also made mom's favorite beans. I have a quick recipe in my video archives for making beans using a great quick soak method. And cooked in an instant pot! I had to make her favorite beans for her as well on her last evening with us. Things you do for your mom :) I'm here for it. May this video find you well and be a useful tool to help with getting closer to a healthier eating lifesyle. As it is such a wonderful thing to make your own meal. My dear sister April joined us this past Christmas. I made a vegan mac and cheese for my lactose intolerant dinner guest so when my sister rang me up a little after the Holidays to ask me for the recipe, needless to say, I was elated about her vegan mac request. If you knew my family, food is a big deal. My Grandmother is an amazing cook. So, passing down those skills wasn't so hard. My mom and my sister cook too. I think that this may be the first time my sister would be making a vegan mac. April makes a scrumptious Mac & Cheese at Mama Gina's Restaurant in Fort Worth, TX. My mom, owner of Mama Gina's and my sister April, cook and operate this female owned business. Mama Gina's sells comfort food and they don't fry a thing. Amazing! My mom began her life long dream of being a restaurateur and ever since Mama Gina's opened 2 years ago, it has been growing and becoming a 'local favorite' amongst its counterparts. As Mama Gina's continues to expand and cook wonderful food for the good folks in Texas, it's shedding a spotlight on the local youth through reading & reach programs and giving by donating meals to those in need whenever possible in the city of Forth Worth. Or wanted to take a break from eating meat? It's a good idea to try vegan dishes. And while you’re tightening up on your belts and giving your organs something to pipe about, eating a vegan or vegetarian meal 3 to 4 times a week has a positive impact on our health and our environment. It's a win win! Or a win win win! Anyway, I couldn’t wait to get this video done so I could share it with April and all of you. It’s a little fancy but bare with me, I think you may enjoy it! This vegan mac and cheese is packed with amazing delicious flavors. I made this recipe with a vegan parmesan cheese. I can’t wait to see what vegan cheeses you find and use. On a cheesy side note, I'm learning more about cashews so not using them or products with them at this time, but I'll let you know my verdict of what information I find. Hey Everyone! It's been a while. I'm back from touring and traveling from singing and now it time to get back in the kitchen. The weather is changing and the leaves are turning. A nice vegan mock fish pie sounds about right for a cozy winter night. This vegan twist on a classic favorite did not disappoint. I was so pleased of how it turned out. I've been experimenting with mushrooms lately and I came up with an idea to make a vegan mock fish pie by using trumpet mushrooms. I cut the trumpet mushroom stems to the shape of scallops to mock seafood, an alternative for fish. I also used cauliflower and parsnip instead of mashed potato for the topping. I also infused the pie with wakame, edible seaweed to mimic the fish pie flavor. I really enjoy coming up with new ideas. Always trying for healthy alternatives for your familiar favorites. I hope you enjoy as much as we did! I made some for my friend as well and I'll post how she liked it too! Let's Get To Cookin!
